ci(release): drop manual shasum collection

This is now included for all GH release assets out-of-the-box, see
https://github.blog/changelog/2025-06-03-releases-now-expose-digests-for-release-assets/

These can be accessed programmatically through
  `gh release view --json assets <release tag>`
and then looking at the `digest` key.
